Pumpkin pie
We had a good weekend. Saturday my mom took Bree out to The Living Desert. Steve and I took the opportunity to get some work done without having Bree at our feet. We went out to the storage unit and tried to get out the stuff we need for the baby. Ugh, it was a mess. It was a good thing Bree wasn't there because boxes were falling on us left and right. It was WAY too hot. I felt dizzy, Steve was climbing our piles of junk with his broken foot. It was a mess. We finally said forget it and came home. We didn't end up bringing anything either. We couldn't even find the baby stuff! So we both took a nap instead. It was nice! First free nap Ive had my whole pregnancy! THANKS MOM!
Bree has been potty trained for the most part for awhile now. She still wears a diaper to bed. Which is my doing, since we share a bed, I don't want to wake up in pee! So I try to talk her out of undies. And she still poops in a diaper. But she has constipation issues so...I'm just happy if she poops. Anyway, Ive let her wear underwear to bed for the past 4 days. I have woken up in pee for the past 3. UGH. So I'm hoping I will wake up dry in the morning. Especially since I just washed my dang duvet cover! LOL
Oh, and I put her to bed in her bed but she seems to be catching on to that because shes been waking up earlier and earlier to crawl in bed with us. LOL
Steve still hasn't got a cast on his foot. He refuses to take it easy. They cant put a cast on until the swelling goes down. But the swelling wont go down until he stays off it. And he wont stay off it! Ugh! Stubborn man!

Steve and Bree made pumpkin pie from REAL pumpkins tonight. This is a big thing for us. LOL Steve told her last week that they'd make pumpkin pies together and she was looking forward to it all week! So she got up at 6 am this morning! Thats like, the butt crack of dawn to us (us being me and Bree, Steve is a freak morning person!) I couldn't go back to sleep after they got up so I got up at 7 and went out to breakfast with them. And for the record, I do not understand how people can be so dang chipper and awake that early in the morning! It's seriously ODD.
So blah, blah, I'm dragging this out aren't I? Get to the point, Katie! They had a blast making pumpkin pies. Bree loved it. Steve said at one point Bree asked him why mama cant make pumpkin pies. And Steve said he told her "mama makes babies and daddy makes food" LMAO I love that!! Good deal for me! I love that Steve cooks with her. I really do not enjoy, or even know how to cook. So I'm glad he's teaching her. Plus, its great bonding time for them! Steve really is a good dad! I don't know what I did to deserve such a good man!

Fresh Pumpkin Pie
INGREDIENTS
1 medium sugar pumpkin
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground all-spice
1 teaspoon salt
4 eggs, lightly beaten
1 cup honey, warmed slightly
1/2 cup milk
1/2 cup heavy whipping cream
DIRECTIONS
Cut pumpkin in half, and remove seeds. Lightly oil the cut surface.
Place cut side down on a jelly roll pan lined with foil and lightly oiled.
Bake at 325 degrees F (165 degrees C) until the flesh is tender when poked with a fork.
Cool until just warm.
Scrape the pumpkin flesh from the peel.
Either mash, or puree in small batches in a blender.
In large bowl, blend together 2 cups pumpkin puree, spices, and salt.
Beat in eggs, honey, milk, and cream.
Pour filling into pie shell.
Bake at 400 degrees F ( 205 degrees C) for 50 to 55 minutes, or until a knife inserted 1 inch from edge of pie comes out clean.
Cool on a wire rack.
